INGREDIENTS
- one pack of boneless skinless chicken thighs
- Blazing Star Reaper Rub
- 1/2 cup of grated cucumber, I used 1 English cucumber
- 1 cup of whole milk Greek yogurt
- Juice of 1/2 lemon
- 1 tablespoon of chopped fresh dill
- 1 tablespoon of chopped fresh mint
- chopped lettuce
- chopped tomatoes
- Feta Cheese
INSTRUCTIONS
- Setup your charcoal grill for an indirect/direct method of cooking
- Season chicken thighs on both sides with Blazing Star Reaper Rub
- Place chicken thighs over indirect heat on your charcoal grill and cook for about 30 minutes until they reach 165
- While chicken is cooking it is time to make the Reaper Tzatziki sauce
- Peel and grate up one English Cucumber
- Drain out all of the water from the grated cucumber with a paper towel
- Add grated cucumber to a bowl
- Add 1 cup of Greek Yogurt to the bowl
- Add the juice of 1/2 lemon to the bowl
- Add 1 tablespoon of chopped fresh dill to the bowl
- Add 1 tablespoon of chopped fresh mint to the bowl
- Add 1 tablespoon of Blazing Star Reaper to the Bowl
- Mix ingredients and refrigerate until ready to serve
- Once chicken is cooked add to direct heat over the hot coals to get a little char on the chicken
- Remove chicken from grill and allow to rest for a few minutes before chopping into bite size pieces
- Heat up Pita bread on the grill for a few minutes before building your Gyros
- Chop up some lettuce
- Chop up some tomatoes
- Place a spoonful of Reaper Tzatziki sauce in the center of the Pita bread
- Place desired portion of chopped Reaper chicken on Pita
- Add some chopped Lettuce
- Add some chopped Tomatoes
- Add some Feta Cheese
- Top with some more Reaper Tzatziki Sauce and enjoy
