Reaper Chicken Gyros With Reaper Tzatziki Sauce

INGREDIENTS

  • one pack of boneless skinless chicken thighs
  • Blazing Star Reaper Rub
  • 1/2 cup of grated cucumber, I used 1 English cucumber
  • 1 cup of whole milk Greek yogurt
  • Juice of 1/2 lemon
  • 1 tablespoon of chopped fresh dill
  • 1 tablespoon of chopped fresh mint
  • chopped lettuce 
  • chopped tomatoes
  • Feta Cheese

INSTRUCTIONS

  1. Setup your charcoal grill for an indirect/direct method of cooking
  2. Season chicken thighs on both sides with Blazing Star Reaper Rub
  3. Place chicken thighs over indirect heat on your charcoal grill and cook for about 30 minutes until they reach 165
  4. While chicken is cooking it is time to make the Reaper Tzatziki sauce
  5. Peel and grate up one English Cucumber
  6. Drain out all of the water from the grated cucumber with a paper towel
  7. Add grated cucumber to a bowl
  8. Add 1 cup of Greek Yogurt to the bowl
  9. Add the juice of 1/2 lemon to the bowl
  10. Add 1 tablespoon of chopped fresh dill to the bowl
  11. Add 1 tablespoon of chopped fresh mint to the bowl
  12. Add 1 tablespoon of Blazing Star Reaper to the Bowl
  13. Mix ingredients and refrigerate until ready to serve
  14. Once chicken is cooked add to direct heat over the hot coals to get a little char on the chicken
  15. Remove chicken from grill and allow to rest for a few minutes before chopping into bite size pieces
  16. Heat up Pita bread on the grill for a few minutes before building your Gyros
  17. Chop up some lettuce
  18. Chop up some tomatoes
  19. Place a spoonful of Reaper Tzatziki sauce in the center of the Pita bread
  20. Place desired portion of chopped Reaper chicken on Pita
  21. Add some chopped Lettuce
  22. Add some chopped Tomatoes
  23. Add some Feta Cheese
  24. Top with some more Reaper Tzatziki Sauce and enjoy
