INGREDIENTS
- 4 large potatoes
- 1/4 cup butter
- Blazing Star Beef Rub
- 2 tablespoons of corn starch
- tablespoon olive oil
- tablespoon of butter
- 1lb ground beef
- 1/2 diced yellow onion
- 1 small green bell pepper diced
- 1 small red bell pepper diced
- minced garlic
- Blazing Star All In One Seasoning
- 6oz of tomato sauce
- Panko
- 2 eggs
- Frying Oil
- Bear and Burton's Breakfast Sauce Too
INSTRUCTIONS
- Peel 4 large potatoes and cut them up into 1 inch cubes
- Boil potatoes until they are fork tender, make sure to add salt to the boiling water
- Drain Potatoes when they are finished cooking, and add to a large bowl
- Add 1/4 cup of butter to bowl of potatoes and mash them up until they are no more clumps of potatoes
- Add 1 tablespoon Blazing Star Beef Rub to season potatoes
- Add 2 tablespoons of Corn Starch to help bind it together, you can add one whole egg or egg yolk for a binder too
- Set aside potato mixture while you make beef filling(I made mine while the potatoes where boiling)
- Add 1 tablespoon of olive oil and 1 tablespoon of butter to pan over medium heat
- Add diced onions and peppers to pan, and allow them to sauté for 3-5 minutes
- Add minced garlic to the pan and sauté for another 2 minutes
- Add 1 tablespoon of Blazing Star All In One Seasoning
- Add 1 tablespoon Chicken Bouillon
- Add 6 oz of tomato sauce and mix everything up well to incorporate
- Add 1lb ground beef to mixture and allow to stew in the pan
- Once meat is broken down and cooked well, remove from heat
- Drain all grease and put meat mixture in refrigerator for about an hour to cool
- Once mixture has hardened up a little bit, it is time to assemble the potato balls
- Take about 2-3 tablespoons of potato mixture and form it out into the palm of your hand.
- Add 1 tablespoon of meat mixture to the center of the flattened potato mixture
- Gently form each side of the potato over the meat mixture until you form a ball. You might need to add more potato mixture to fill in holes
- I recommend putting the potato balls in the refrigerator for a little bit to firm up after rolling out all of them
- Mix up two eggs in a bowl
- Add 1 cup of panko crumbs to another bowl(add more panko if needed to finish coating all of the balls)
- Dredge each ball in the egg wash and then drop them in the panko to coat all sides
- Deep Fry Balls at 350-375 in cooking oil until golden brown on all sides
- Allow to cool off and serve with Bear and Burton's Breakfast Sauce Too
